为提高食品科学与工程专业学生认知实习课程的教学效果,文章结合专业人才的培养方案,对食品科学与工程专业认识实习教学模式进行改革,提出利用参观教学实验室、教学实践基地、科研实验室、食品企业、食品博览会等开展认识实习教学,利用多元化的"动态"与"静态"相结合的考核方式并形成了"五位一体"有机联系的教学模式,以期为食品科学与工程专业相关课程的教学改革及专业人才的培养提供参考.
海洋中药是中药材中的一类,海洋所具有的特殊环境及其他因素造就了其特别的功能与药效.海洋中药大致可分为3类,分别为动物类、植物类以及矿物质类中药.主要介绍了不同种类的海洋中药及其功能特性的研究进展,并对其发展前景进行展望.
以6种鲜菌草(象草、巨菌草、五节芒、芒萁、类芦、菅)草粉为培养料,采用三级系统筛选法对6种鲜菌草草粉进行配方筛选优化,以期得到鲜菌草栽培平菇的最佳配方.结果 表明:鲜菌草栽培平菇的最佳配方为鲜象草26%、鲜五节芒26%、鲜类芦26%,麸皮20%、石灰2%、含水量60%,该配方的碳氮质量比为28.6∶1,生物学效率为82.40%.鲜象草、鲜五节芒和鲜类芦组成的鲜菌草配方适宜作为栽培平菇的培养料.
海洋微藻中富含多种功能性特异的脂类物质,其提取方法和功能特性逐渐受到研究者的关注.本文综述物理法、化学法、物理化学法、生物法四种微藻油提取方法及其优缺点;阐述了微藻油中二十二碳六烯酸(DHA)、二十碳五烯酸(EPA)和角鲨烯的抗肿瘤、降血脂、增强智力、预防心血管疾病等功能;介绍了微藻油在食品、医药和养殖业的应用;提出了微藻油提取技术及其功能特性的发展趋势,并展望了微藻油的应用前景.
The effects of glucose, peptone, KH2PO4, fruit and vegetable juice on the biomass of Flammulina velutipes were studied by response surface methodology using Box-Behnken center combination design with 4 factors and 3 levels. The results showed that the optimum medium mass fraction was glucose 2.15%, peptone 0.38%, KH2PO4 0.27%, fruit and vegetable juice 12.90%. Under the condition of optimizing the composition of the medium, the maximum yield of mycelium of Flammulina velutipes was 21.51 mg/mL and the actual measured value was 21.46 mg/mL.
以鲜菌草(巨菌草、象草、五节芒)及其相对应的干菌草为试材,采用单因素试验方法,研究鲜菌草与干菌草灭菌前与灭菌后的碳氮含量及碳氮比的变化.结果表明:灭菌前,鲜菌草的碳含量低于相应干菌草的碳含量,鲜菌草的氮含量高于相应干菌草的氮含量,鲜菌草的碳氮比均低于相应干菌草的碳氮比;灭菌后,鲜菌草与干菌草的碳含量和氮含量均有所降低,除了干巨菌草以外,鲜菌草与干菌草的碳氮比均降低,鲜菌草的碳氮比也低于相应干菌草的碳氮比.因此,灭菌对鲜菌草和干菌草的碳含量、氮含量和碳氮比均有影响,鲜菌草更适合用于栽培较低碳氮比的食药用菌.
目的 通过研究水浴热烫炮制对栀子中栀子苷(Geniposide)含量的影响,建立最佳的水浴热烫炮制方法.方法 将霜降前和霜降后采收的栀子经过不同温度和不同时间的水浴热烫处理后,用HPLC检测其中栀子苷含量.结果 栀子的最佳采收期为霜降后,即1/3青2/3黄时采收为宜;水浴热烫炮制最佳方法为90℃下处理10min,Geniposide的含量可达7.12%.结论 霜降后采收的栀子中Geniposide含量高于霜降前采收的;水浴热烫炮制法可提高栀子中Geniposide含量.
文章讨论了多媒体技术教学及特点,并针对食品微生物检验学实验教学中存在的抽象、难理解、操作要求高等问题,论述了其在食品微生物检验学实验教学中应用的必要性及可行性.文章认为,随着信息技术的发展,充分利用多媒体技术可以提升食品微生物检验学实验的教学效果.
β-葡萄糖苷酶是纤维素分解酶系中的重要组成部分,具有广泛的应用前景.以牛瘤胃为材料,筛选得到4株β-葡萄糖苷酶产生菌株,采用3,5-二硝基水杨酸(DNS)法测定各菌株的β-葡萄糖苷酶酶活力,选取1株β-葡萄糖苷酶酶活力较高的菌株,结合16S rDNA序列分析方法对其进行分子生物学鉴定.结果表明:筛选到1株产β-葡萄糖苷酶活力为6.589 U·mL-1的菌株命名为TA1;经鉴定该菌株为液化沙雷菌属(Serratia liquefaciens).研究结果对产β-葡萄糖苷酶的微生物资源获取具有一定的借鉴意义.

Hyperlipidemia is a serious disease that affects people's physical health in modern society,and the development of high effective blood lipid lowering drugs and natural active material is a central issue in the field of medical and functional foods at home and abroad.With abundant resources,high efficiency,low toxicity and little side effect,marine hypolipidemic bioactive substances have attracted more attention and been widely used in the fields of food,medicine and chemical industry.It has become the focus of research and development of lipid-lowering drugs.This article mainly reviews the hypolipidemic effects of marine bioactive substances,aiming to provide scientific references for the research and development of new hypolipidemic drugs and natural bioactive products.
To optimize the extraction technique for mycelium polysaccharide from A.auricular,the effects of extraction temperature,extraction time,the liquid to solid ratio and their interaction on extraction rate were studied by Box-Behnken design.The predictive model and reliability were developed by Design Expert software and response surface analysis(RSM).The optimal extraction conditions were achieved and listed as follows :extraction temperature 81.59℃,extraction time 81.40 min,liquid-to-solid ratio 36.42∶1.Under the optimum conditions,the extraction yield of mycelium polysaccharide from A.auricularreached 7.79 mg/g,while the predicted one was 7.92 mg/g.The results showed the suitability of RSM in optimizing the extraction of mycelium polysaccharide from A.auricular.The necessary technical support was provided by this experimental study for the industrial production of mycelium polysaccharide fromA.auricular.
