Dry-aged beef is a premium product known for its unique taste and aroma. These characteristics are thought to partially depend on the composition of the microorganisms present on the meat surface during ageing. Recently several attempts to standardise this process were made. This study aimed to assess the effect of a fungal biostarter application on the profile of volatile compounds, fatty acid composition and sensory quality of dry-aged beef. The Longissimus muscle used in the experiment originated from 20 crossbred (10 heifers and 10 steers) animals from the crossing of Holstein-Friesian cows with beef breed bulls. A fungal biostarter composed of Mucor flavus strain KKP2092p was used for meat inoculation. Half of the material was aged without the use of a biostarter (Control samples). The dry-ageing of the meat was performed at a temperature of 1.5 degrees C with approximately 80-90 % relative humidity for 28 days. The use of Mucor flavus KKP2092p improved meat quality attributes (aroma liking, flavour and overall liking) as a result of the formation of specific volatile compounds. The profile of volatile compounds in the meat aged with Mucor flavus and control variants was differentiated. This study also indicated that Mucor flavus biostarter had an impact on the specific fatty acid composition. An insignificant effect of Mucor flavus on lipid oxidation expressed as mg/kg of malonaldehyde was also observed.
Kombucha is a functional beverage with growing popularity due to its health-promoting properties. This study aimed to evaluate the impact of herbal infusions on the quality of green tea-based kombucha. Four variants were prepared: a control (K1) and three experimental samples combining 70% green tea with 30% (v/v) Mentha spicata (K2), Hibiscus sabdariffa (K3), or Clitoria ternatea (K4). Fermentation lasted four days at 24 ± 1 °C. Physicochemical parameters, polyphenol profile (HPLC), microbiological safety, and sensory quality were assessed using QDA and electronic tongue analysis. K3 showed the highest polyphenol content (291 mg/L), especially catechins. K4 achieved the highest overall sensory quality due to its fruity aroma, balanced sweet-sour taste, and favorable microbiological profile. K2 had the lowest caffeine content (114 mg/L) and a distinct minty flavor. All samples were microbiologically safe. Herbal additives influenced fermentative microbiota: K3 had fewer acetic acid bacteria, while K4 had the highest lactic acid bacteria count. Electronic tongue analysis confirmed sensory panel results and revealed distinct taste profiles among the variants. Herbal infusions significantly enhance the nutritional and sensory properties of kombucha. Their use offers a promising strategy for developing functional beverages with tailored characteristics.
Sensory evaluation, based on cognitive and hedonic dimensions, is crucial in developing innovative foods, such as juices made from less popular but highly nutritious fruits. It enables the creation of products with sensory images tailored to consumers’ needs. The research aimed to determine the optimal sensory image of kiwiberry juice blended with ‘Jonagold’ apple juice (10–50%) which would lead to a positive consumer perception. For this purpose, similarities and differences in the sensory profile of kiwiberry juice blended in various proportions with apple juice were evaluated. In hedonic tests, the degree of liking of the products and the analysis of changes in the type and level of consumer emotional reactions (FaceReader) to the juices were performed. To gain a deeper understanding of consumer perceptions, the assessment included expected liking, experienced liking, and purchase intention. It was found that different proportions of apple juice added to kiwiberry juice evoked positive changes in sensory characteristics in the quantitative and qualitative dimensions. The highest sensory quality was noted in the kiwiberry juice with 50% apple juice. Different levels of apple juice addition also conditioned positive changes in affective responses of consumers. Both experienced liking and purchase intention increased with higher levels of apple juice addition (30–50%). The results of emotional reactions reveal that the ranges of variability among examined emotions varied. The most prominent reaction was neutrality, followed by anger, happiness, disgust, and surprise. An affinity of the degree of liking and emotions to specific juices was noted. The liking attributes were related positively to the sensory image of products with higher content of apple juice and inversely related to the properties of kiwiberry juice which caused negative emotions.
The study investigated the effects of storage temperature, type of coffee, and brewing method on coffee’s volatile compound profile and sensory quality. Three types of coffee were included in the study: Arabica, Robusta, and their 80/20 blend. Samples were stored at 5 °C and 20 °C for one month, after which the changes in the composition of volatile compounds were analysed and the sensory quality of espresso and cold brew coffee was assessed. The results showed that storing coffee at a lower temperature slows the changes in the profile of volatile compounds such as aldehydes, alcohols, pyrazines, and furans, helping preserve the desired aroma and flavour characteristics. Storage at higher temperatures resulted in greater changes in the volatile profile and sensory quality, with higher perceptions of earthy, sharp, and smoky notes and lower chocolatey and sweet notes. The brewing method also had a significant effect on the sensory quality. The espresso coffee had a higher intensity of coffee aroma, chocolate flavour, smoky aroma, and roasted notes. In contrast, cold brew coffee was perceived as sweeter, fruitier, and had more pronounced rum notes. The coffee type also significantly influenced the aroma and flavour profile. Arabica had a more harmonious and mild aromatic profile, while Robusta had a sharper aroma. The blend of Arabica and Robusta combined the characteristics of both coffees and offered a balanced aromatic profile.
The objective of our paper was to evaluate the effect of honey powder addition on the quality of model chicken products over 14 days of refrigerated storage. Three model chicken product variants were produced: C—control, HP1%, HP2%—with 1 or 2% of honey powder addition. The cooking loss, basic chemical composition, water activity, texture, color, lipid oxidation (TBARS and PDSC), microbiological and sensory quality, and volatile compounds profile were determined. The adverse changes in lipids were slower in products with honey powder added compared to control product, revealing lower TBARS index values and longer oxidation induction times. After 14 days of storage, HP2% products showed significantly lower (up to 50%) TBARS values than control products. Furthermore, honey powder addition reduced the growth of psychrotrophic and lactic acid bacteria for up to 14 days of storage in comparison to the control products. However, deterioration of the volatile compounds profile (presence of alcohols and sulfur compounds) and occurrence of storage odor and flavor had an impact on the poorer sensory desirability of the control and HP1% products. Additional research is necessary aiming to improve the sensory quality of products with honey powder addition.
This study investigates the potential of using fermentation and germination can alter the nutritional and sensory properties of bean-based beverages (BBs) and lentil-based beverages (LBs). The research examines the impact on B vitamins, dietary fiber, glycemic index (GI), isoflavones, and volatile compounds. In addition, the influence of germination, fermentation, and the addition of raspberry-cranberry pulp on the sensory properties was investigated. Germination was found to increase the levels of specific B vitamins, isoflavones, and dietary fiber while decreasing the GI. The microorganisms involved in fermentation showed the ability to synthesize thiamine, riboflavin, and pyridoxine. However, the changes in volatile compounds due to fermentation had a negative impact on the sensory quality of the beverages. The study suggests that the sensory quality of BBs and LBs could be enhanced by incorporating raspberry-cranberry pulp. Although germination and fermentation improved the nutritional properties of the beverages, the study highlights the need for further research to enhance their sensory quality.
Transitioning to a plant-based diet presents a number of complex ethical, environmental, and health-related considerations. This trend is not only reshaping consumer diets, but also steering the food industry towards the development of new plant-based products. The primary aim of this study was to examine and identify the sensory similarities and differences in soybean spreads consisting of vegetable purées—specifically, beetroot, pumpkin, broccoli, and carrot—with the addition of spices such as marjoram and cumin. The sensory assessment was conducted using the Quantitative Descriptive Analysis (QDA). Twenty-three descriptors were selected and defined following the profiling procedure. The sensory properties of soy-based spreads have been significantly altered by the addition of vegetable purées and spices. Adding vegetable purées reduced the intensity of soybean odour and flavour, lowered fatty notes, and resulted in a less dense texture, while enhancing vegetable odour and flavour. This also improved the moisture content and overall sensory quality of the spreads. Although spices did not notably enhance these sensory attributes, soy-based vegetable spreads remain an attractive option for unique vegetarian finger foods and lunch dishes, catering to diverse consumer preferences. The addition of vegetable purées and spices to spreads creates opportunities for innovative and flavourful plant-based options.
The house cricket (Acheta domesticus L.) is one of four edible insect species introduced to the EU market as a novel food and alternative protein source. Innovative products, such as cricket flour, are increasingly appearing on supermarket shelves and can offer an alternative to traditional cereals, while providing the body with many valuable nutrients of comparable quality to those found in meat and fish. The aim of this study was to investigate the possibility of using cricket powder as a substitute for wheat flour in the production of bread. The physicochemical properties of cricket powder were evaluated in comparison to wheat flour. As a result of technological studies, bread compositions with 5%, 10% and 15% replacements of wheat flour by cricket powder were designed and their quality characteristics (physicochemical, sensory and microbiological) were evaluated. Cricket powder was characterised by a higher protein (63% vs. 13.5%) and fat (16.3% vs. 1.16%) content and a lower carbohydrate (9.8% vs. 66%) and fibre (7.8% vs. 9.5%) content as compared to wheat flour. The tested preparations had a similar pH (6.9 and 6.8, respectively, for cricket powder and flour) and fat absorption capacity (0.14 vs. 0.27 g oil/g powder, respectively, for cricket powder and flour) but different water holding capacities and completely different colour parameters. All breads had good microbiological quality after baking and during 7 days of storage. In instrumental tests, the 10 and 15% replacements of wheat flour by cricket powder affected the darker colour of the breads and caused a significant increase in the hardness of the breads. The research has shown that the optimal level of replacement, which does not significantly affect the physiochemical and sensory characteristics, is 5% cricket powder in the bread recipe. Considering the results obtained and the fact that insects provide a sufficient supply of energy and protein in the human diet, are a source of fibre, vitamins and micronutrients, and have a high content of monounsaturated and polyunsaturated fatty acids, the suitability of cricket powder for protein enrichment of bakery products is confirmed.
The growing problem of sensory integration disorders indicates the need to understand the role of the senses in children’s food acceptance and to use this knowledge to determine actions to reduce food selectivity and neophobic attitudes. The paper analyzed the current scientific literature data concerning the impact of sensory integration disorders on children’s eating behaviors. The influence of multisensory experiences and sensory education in shaping the proper eating habits of children with sensory integration disorders was also discussed. The importance of educational programs in public institutions and programs dedicated to parents’ children with sensory integration disorders was emphasized. Analysis of current scientific literature data regarding the research topic (databases: Google Scholar, Web of Science, PubMed, Elsevier) was performed. Analysis of literature data indicates that sensory integration disorders affect children’s eating habits and increase the risk of food selectivity and neophobic behaviors. Sensory learning-based interventions increase children’s engagement and facilitate the formation of proper eating habits. Sensory education programs should be interactive and tailored to the individual needs of children with sensory integration disorders. It is extremely important to support parents in increasing their theoretical and practical knowledge.
Malnutrition, food security and food safety will remain major global issues as the world’s population grows and the consequences of climate change prevail, so we need to rethink how we grow and source food to create sustainable systems for future generations. Edible cities, as innovative solutions to use public spaces for urban food production, can bridge this evident gap between the present and the future. The aim of this review was to analyze the opportunities and constraints for creating edible cities and accessing wholesome functional foods in a sustainable way and explore existing solutions that can be strengthened. We can grow food in urban environments using ideas such as controlled-environment farms (CEAs), home food gardens on balconies, roofs and terraces, underground farming and foraging. As citizens become more aware of complex foods with nutritional benefits, we should take this opportunity to teach them about edible wholesome functional foods and how they can be grown instead of using plants. There are still many constraints such as pollution, a lack of government support and the economic aspects of urban farms that need to be resolved in order for edible cities and access to functional foods in them to become the standard worldwide. The goal is worthwhile as citizens would benefit from climate control, reduced resource consumption, a safer food supply, improved mental and physical health, reduced malnutrition and nutritional deficiencies and connected communities that share knowledge and resources to further innovation and welfare.
Entomophagy, that is, the consumption of insects, is gaining more and more popularity. The research carried out so far on the use of edible insects in the food industry has shown that they are a valuable source of protein, and do not significantly affect the functional and sensory properties of food. Edible insects also contribute to sustainable, environment friendly food production. Taking the above into account, the influence of adding insect powder on the physicochemical properties, sensory characteristics, and microbiological qualities of wheat bread was evaluated. This study aimed to partially replace wheat flour (5, 10, and 15%) in bread with mealworm powder (T. molitor) to produce protein-fortified bread. Bread containing mealworm powder showed similar density and water activity compared to the control wheat bread. The addition of mealworm powder did not negatively affect the properties of bread. The total color difference increased significantly (p < 0.05) with the insect flour share in bread formulation and ranged between 2.27 for M5, 4.00 for M10, and 4.50 for M15. The protein content in bread fortified with 5–15% mealworm powder increased by 15–59% compared to the control bread, whereas fat content increased by 35% to 113%. Results of sensory evaluation revealed that modification of the recipe, depending on the mealworm powder addition level, significantly (p < 0.05) affected bread color, odor, flavor, and overall sensory quality. The research showed that the optimal enrichment level is using 5% mealworm flour in the bread recipe. Moreover, the obtained variants of bread were characterized by good microbiological quality after baking. In bread M10, no yeasts and molds were found during a period of 2 days of storage. The number of yeasts and molds in the other bread variants was relatively low. To conclude, the results confirmed the usefulness of insect powder in making protein-fortified bread of good quality comparable to traditional wheat bread.
The study aimed at identifying the socioeconomic, eating- and health-related limitations and their associations with food consumption among Polish women 60+ years old. Data on the frequency of consumption of fruit, vegetables, dairy, meat, poultry, fish, legumes, eggs, water and beverages industrially unsweetened were collected with the Mini Nutritional Assessment (MNA®) and were expressed in the number of servings consumed per day or week. Three indexes: the Socioeconomic Status Index (SESI), the Eating-related Limitations Score (E-LS) and the Health-related Limitations Score (H-LS) were developed and applied. SESI was created on the base of two variables: place of residence and the self-reported economic situation of household. E-LS included: difficulties with self-feeding, decrease in food intake due to digestive problems, chewing or swallowing difficulties, loss of appetite, decrease in the feeling the taste of food, and feeling satiety, whereas H-LS included: physical function, comorbidity, cognitive function, psychological stress and selected anthropometric measurements. A logistic regression analysis was performed to assess the socioeconomic, eating-, and health-related limitations of food consumption. Lower socioeconomic status (vs. higher) was associated with a lower chance of consuming fruit/vegetables ≥ 2 servings/day (OR = 0.25) or consuming dairy ≥ 1 serving/day (OR = 0.32). The existence of multiple E-LS limitations (vs. few) was associated with a lower chance of consuming fruit/vegetables ≥ 2 servings/day (OR = 0.72), consuming dairy ≥ 1 serving/day (OR = 0.55) or consuming water and beverages industrially unsweetened ≥6 cups/day (OR = 0.56). The existence of multiple H-LS limitations was associated with a lower chance of consuming fruit/vegetables ≥ 2 servings/day (OR = 0.79 per 1 H-LS point increase) or consuming dairy ≥ 1 serving/day (OR = 0.80 per 1 H-LS point increase). Limitations found in the studied women were related to insufficient consumption of selected groups of food, which can lead to malnutrition and dehydration. There is a need for food policy actions, including practical educational activities, to eliminate barriers in food consumption, and in turn to improve the nutritional and health status of older women.
Nowadays, the trend related to healthy eating is constantly growing among consumers. The juices based on kiwiberry containing over 20 vital nutrients may have a potential for usage in developing innovative products targeting health-concerned consumers. The aims of the study were: (1) to identify the volatile compounds of kiwiberry juice and its mixes with basic organic juices; (2) to determine the sensory characteristics and level of liking with regard to the tested samples and (3) to select the juice-mix with the highest sensory quality properties and liking. The measurements of volatile compounds in juices were made using a Heracles Neo ultrafast gas chromatograph (HS-GC). The sensory characteristics of the juices were assessed by Descriptive Quantitative Analysis, whereas the consumers’ overall liking was assessed on a 9-point hedonic scale. It was stated that the examined juices differed in the pattern of volatile compounds as well as in the sensory properties and the level of liking. The increasing addition of apple and pear juice to kiwiberry based juices in different ratios contributed to the exposed volatile compounds responsible for floral, sweet and fruity odours. The juice mixes with higher addition of apple or pear juices were more harmonized in terms of sensory image and represented higher levels of overall liking among consumers.
Poland is one of the largest producers of hazelnuts in Europe; however, information regarding the storage of cold-pressed hazelnut oil is limited. Thus, the aim of this study was to determine the oxidative indices and fatty acid composition of oils from six hazelnut cultivars during 9 months of storage. At the beginning of storage, the hazelnut oils showed zero or very low oxidation values, which indicated the absence of initial triglyceride hydrolysis and fatty acid oxidation. Acid values increased with storage time, which was statistically significant, ranging from 0.17 to 0.34 mg KOH/g oil. The peroxide value in the first 5 months of storage was undetectable, whereas after 9 months the oils showed a slight increase in oils obtained from the ‘Olbrzym z Halle’ cultivar, followed by the ‘Barcelonski’ cultivar, at 3.39 and 2.15 meq O2/kg, respectively. The lipid content of the kernels was very stable under storage conditions. Total monounsaturated fatty acid content exhibited the highest proportion, while saturated fatty acids (SFAs) had the lowest content over the entire storage period. The percentage of polyunsaturated fatty acids showed a small decrease during storage, but was not statistically significant; therefore, polyunsaturated fatty acid remained stable. The percentage of monounsaturated fatty acids decreased by approx. 1.6%, thus the percentage of SFA increased by approx. 13.7% during 9 months of storage. The oil yield ranged from 69% for nuts from the ‘Nottinghsamski’ cultivar to 75% from the ‘Webba Cenny’ and ‘Barcelonski’ cultivars.
Poland is one of the largest producers of hazelnuts in Europe; however, information about the contents of biologically active compounds in hazelnuts grown in Poland is limited. The aim of this study was to analyze and compare the concentrations of phenolic acids, flavonols, and tocopherols in raw and roasted hazelnut kernels and their skin, in addition to determining the effect of the cultivar and year of cultivation. The experiment was carried out in 2016–2018, and the nuts of six hazelnut cultivars were used for research purposes. Among the detected phenolic acids, p-coumaric acid was the most abundant in roasted and unroasted kernels, whereas the apigenin content represented 43%–45% of the total flavonols. The harvest year had a significant effect on the polyphenol content of hazelnuts, whereas roasting had a minor impact. The hazelnut skin contained 168- to 378- fold higher contents of total phenolic compounds than the raw and roasted nuts. Gallic acid was the most abundant phenolic acid in hazelnut skin, contributing 95.0% of the total polyphenols on average. α-Tocopherol was the most abundant tocopherol in the hazelnut cultivars, followed by β + ƴ-tocopherol and δ-tocopherol in hazelnut cultivars. The statistical analysis showed that roasting and year of cultivation did not affect the tocopherol contents of the investigated samples.
The plants described in this review are a source of natural hig-hintensity sweeteners, which can be used in food and by the pharma-ceutical industry in the future. Most of the plants are still not approved for use, even though they are traditionally used in countries where they appear naturally. Ten of the herein described intense sweeteners are characterized by a much higher sweetness in relation to sucrose. The highest values were received for miraculin, obtained from Synsepalum dulcificum (400,000 times sweeter than sucrose, induced by citric acid); thaumatin (1,600 to 3,000 times sweeter), monatin (1,200-3,000) and pentadin (500 to 2,000 times sweeter). Some of these substances can also modify the taste, like changing sour into sweet taste (miraculin and neoculin). The most widely used sweeteners are steviol glycosides and thaumatin, which have been admitted for use as a sweetener in the European Union, while in the US, they have the GRAS status (thaumatin as a food enhancer). Mogroside obtained from Siraitia grosvenorii (called Luo Han Guo) is not approved for use in the EU, but was granted GRAS status in the US by the FDA. This gives a chance that it will soon be approved as a novel food or food additive in the European Union.
In the present study, the nut and kernel traits of six hazelnut cultivars (‘Barceloński’, ‘Kataloński’, ‘Webba Cenny’, ‘Olbrzym z Halle’, ‘Cosford’, and ‘Nottinghamski’) grown in Poland were investigated. Results showed that significant differences estimated among all six cultivars with all selected morphological traits and compositional properties. During statistical analysis the year of the study was not found to affect most of the investigated traits. The investigated cultivars showed a lower protein content (11.27–13.44%), higher carbohydrate content (16.40–21.79%) and similar fat content (58.91–63.83%) to nuts grown in a warmer climate like Turkey, Italy or Spain. The studied hazelnut varieties were large-sized with diameters greater than 20 mm. The nuts of the ‘Barceloński’, ‘Kataloński’ and ‘Olbrzym z Halle’ cultivars were characterized by the smallest diameters of nut and kernel, were the most spherical (0.85–0.95) and exhibited the largest average nut volume (4.26–4.46). Significant differences were found between the cultivars for oil content and the ratios of major fatty acids. The QDA results, estimated that other than shape, the evaluated nuts significantly differed only in the intensity of nutty flavor (4.88–5.92). The highest intensity of this attribute was found in three cultivars, ‘Nottinghamski’, ‘Cosford’, ‘Olbrzym z Halle’, whereas the lowest estimate was found in the ‘Barceloński’ cultivar, which was also slightly less sweet and more bitter. As a result, the present study showed that the investigated hazelnut kernels can be divided into two groups: ‘Nottinghamski’, ‘Cosford’, and ‘Webba Cenny’ are suitable for table consumption, while ‘Barceloński’, ‘Kataloński’, and ‘Olbrzym z Halle’ are suitable for the processing industry. The current experimental results may help to growers and breeders when choosing the cultivars for new plantations and possibilities of destinations of the produced nuts, for confectionery use or table consumption.
A holistic approach to understanding the relationship between diet, lifestyle and obesity is a better approach than studying single factors. This study presents the clustering of dietary and lifestyle behaviours to determine the association of these dietary-lifestyle patterns (DLPs) with adiposity, nutrition knowledge, gender and sociodemographic factors in teenagers. The research was designed as a cross-sectional study with convenience sampling. The sample consisted of 1549 Polish students aged 11–13 years. DLPs were identified with cluster analysis. Logistic regression modelling with adjustment for confounders was applied. Three dietary-lifestyle patterns were identified: Prudent-Active (29.3% of the sample), Fast-food-Sedentary (13.8%) and notPrudent-notFast-food-lowActive (56.9%). Adherence to Prudent-Active pattern (reference: notPrudent-notFast-food-lowActive) was 29% or 49% lower in 12-year-old or 13-year-old teenagers than in 11-year-old teenagers, respectively, and higher by 57% or 2.4 times in the middle or the upper tertile than the bottom tertile of the nutrition knowledge score. To the contrary, adherence to Fast-food-Sedentary (reference: notPrudent-notFast-food-lowActive) was lower by 41% or 58% in the middle or the upper tertile than the bottom tertile of the nutrition knowledge score, respectively. In Prudent-Active, the chance of central obesity (waist-to-height ratio ≥0.5) was lower by 47% and overweight/obesity was lower by 38% or 33% (depending on which standard was used: International Obesity Task Force, 2012: BMI (body mass index)-for-age ≥ 25 kg/m2 or Polish standards, 2010: BMI-for-age ≥ 85th percentile) when compared with the notPrudent-notFast-food-lowActive pattern. In Fast-food-Sedentary, the chance of central obesity was 2.22 times higher than the Prudent-Active pattern. The study identified a set of characteristics that decreased the risk of general and central adiposity in teenagers, which includes health-promoting behaviours related to food, meal consumption and lifestyle. Avoiding high-energy dense foods is insufficient to prevent obesity, if physical activity and the consumption frequency of health-promoting foods are low and breakfast and a school meal are frequently skipped. The results highlight the importance of the nutrition knowledge of teenagers in shaping their health-promoting dietary habits and active lifestyle to decrease adiposity risk and negative aspects of lower family affluence which promotes unhealthy behaviours, both related to diet and lifestyle.
