本报告深入研究了中国奶类消费现状和特征,从供给端和消费端分析我国奶类消费制约因素.提出我国奶业通过创建中国奶业 20 强企业发展平台,加大产品创新,拓展消费渠道,加快数字化发展,推广国家学生饮用奶计划,开展中国小康牛奶行动等方式积极促进消费提升,并给出未来进一步扩大国内需求、提升消费水平的建议和措施.
党的二十大报告指出,高质量发展是全面建设社会主义现代化国家的首要任务.中国奶业积极贯彻新发展理念昂首迈向高质量发展壮阔征程.回首近几年来,在党中央国务院的高度重视下,经过全行业的不懈努力,中国奶业在质量安全、创新能力、品牌效应、消费水平、综合竞争力等方面实现突破发展,交出亮丽答卷.尤其面对百年变局考验和疫情严峻冲击,中国奶业彰显出强劲韧性与活力跨越提升实现逆势增长.但不容忽视,奶业发展不平衡不充分、奶制品消费不振、奶牛养殖成本居高不下等问题仍然突出,推进高质量发展还有诸多困难和瓶颈.中国奶业需要加快转变发展方式,更多依靠创新驱动,推动质量变革、效率变革、动力变革,着力提高发展质量和发展水平.本研究报告阐述了奶业高质量发展的重要意义和内涵,指出中国奶业高质量发展存在良好产业基础,以及在养殖、加工、消费、全链条等方面存在的主要瓶颈,着力强调我国奶业高质量发展的主要目标和重要任务,并给出积极的政策建议和行动举措.
2021年上半年,我国奶业生产呈现良好发展态势,产销两旺,各项生产指标和效益指标均全面增长.生鲜乳产量持续增长,上半年奶站生鲜乳产量同比增长10.4%.全国荷斯坦奶牛存栏稳步增长,截至6月末,全国荷斯坦奶牛存栏量同比增长11.4%;单产水平8.6吨,同比增长3.6%.上半年生鲜乳平均价格4.3元/千克,同比上涨13.5%;成母牛平均产奶利润6880元,同比增加2896元.
本次调研共收集了华北地区99家奶牛场的用水及粪污处理情况数据进行了分析总结.结果表明,①85.9%的牛场以深井水作为水源,其中61.2%的牛场对用水进行消毒处理,43.5%的牛场安装有水表并记录用水情况.②在牛场用水中,牛的饮水量所占比例最高,达60%以上;其次为挤奶厅用水,约占20%.③夏季牛场头均饮水量、挤奶厅用水量、喷淋用水量均显著高于春秋冬季(P<0.05),夏季的头均总用水量比春秋冬季增加了33%(P<0.01).随着牛场存栏量的增大,奶牛头均总用水量显著减少(P<0.05).④年产奶量较高的牛场每产1kg牛奶饮水量、挤奶厅用水量显著降低(P<0.01),致使每千克产奶量的总用水量减少52%(P<0.01),用水效率提高.⑤随着养殖规模的增大,牛场雨污分离设施与干湿分离设施配备率分别显著增至62%、72%(P<0.05,P<0.01).由此可得,存栏量越大、年产奶量越高,牛场每产1kg牛奶用水量越低,用水效率越高,而且配备的雨污分离设施、干湿分离设施比例越高,这些均有利于减少单位产奶量的粪污产生量及其处理压力.

This paper analyzes the current dairy industry in our country in the comprehensive production, quality and safety supervision, construction of milk source, capital market and policy implementation, and points out the main problems facing the current dairy industry in the development. At the same time, it's showed that there are three main reasons, for example the import, consumption and economic environment, and then put forward to promote sustainable measures and suggestions for the healthy development of dairy industry in the immediate and long-term consideration.
The objective of the present study was to investigate the effects of dietary cation anion balance on blood biochemical parameters of heat stressed lactation dairy cows.75 middle lactation(104.8DIM±12DIM)China Holstein cows were used in a randomized complete block design into five groups with similar parity,milk yield and weight,the groupsⅠ,Ⅱ,Ⅲ,Ⅳand control group were adjusted the DCAB value by providing with different level cation-anion salt,which were 195.76,186.68,177.77,166.94 and 239.12mEq/kg DM.The experiment was conducted for 67 days,including a 7day adaptation period and a 60 day treatment period.The results showed that:compared with the groupsⅢ,Ⅳand control,the PO2 of the groupsⅠ,Ⅱhave increased that were significantly different(P0.05);the effect of DCAB on dairy cows PCO2,pH,HCO-3,TCO2,SATO2 in blood was not significant difference(P0.05).Compared with the groupsⅢ,Ⅳ and control group,the groupsⅠ,Ⅱcreatine phosphokinase(CK)in serum have decreased,the effect of DCAB on creatine phosphokinase(CK)in serum was significant difference(P0.05);the glutamic-pyruvic transaminase(GPT)in serum have increased,which increased13.98%,15.99%,10.77%and 4.55%,6.40%,1.61%,respectively,but there were not significant difference(P0.05).The content of T4,T3 and COR in serum were not significantly affected by change the DCAB value(P0.05),but effect of DCBA on the content of urea nitrogen in serum was significant difference(P0.05),the concentrations of urea nitrogen in serum have an increasing trend,with increasing DCAB values,concentrations of urea nitrogen in group Ⅰ was the highest.Therefore,comprehensive index above,under the condition of heat stress,middle lactation cows feeding DCAB value of 186.68 to 195.76mEq/kg DM diet is more suitable to improve its health.
2013年,我国乳制品加工行业发展总体状况良好。规模以上乳品企业数量658个,实现产品销售收入2831.59亿元,利润总额180.11亿元,乳制品产量2698.03万t,分别比2012年增长1.39%、14.16%、12.70%和5.15%。乳品企业发展态势良好、业绩突出。2013年伊利、蒙牛、光明、三元、贝因美、皇氏的营业收入分别为477.79亿元、433.60亿元、162.90亿元、37.88亿元、61.17亿元、9.89亿元,分别比2012年增长13.78%、20.18%、18.26%、6.70%、14.25%、31.17%。
The trial aimed to study the effects of dietary cation-anion balance ( DCAB) on mineral metabolism of dairy cows in the condition of heat stress. A total of 75 healthy middle lactation [day in milk was (104.8± 12.0) d] China Holstein cows were used in a randomized complete block design and divided into five groups with similar parity, milk yield and weight, i. e. groups Ⅰ, Ⅱ, Ⅲ, Ⅳ and control. The DCAB value in each group was adjusted by providing with different level cation-anion salt. The DCAB values of those groups were 195.76, 186.68, 177.77, 166.94 and 239.12 mEq/kg DM, respectively. The total duration of the experiment was 67 days, the first 7 days of the experiment was the preliminary period and the formal experiment lasted for 60 days. The results showed as follows:the temperature humidity index exceeded 72, and the dairy cows were in heat stress. The rectal temperature of dairy cows in control group was the highest, that in groupⅠwas mini-mum. The breathing rate was increased with DCAB value increase, but no significant difference was observed among groups ( P>0.05) . The concentrations of K, Ca, Mg, P in milk were not significantly affected by the DCAB value ( P>0.05) . Compared with the groups Ⅲ and Ⅳ, the concentration of Na in milk in the groupsⅠ, Ⅱ and control was significantly increased ( P<0.05) , and the concentration of Cl was significantly lower ( P<0.05) . The effects of DCAB value on the concentrations of K, Mg, P, and Na in serum were not signifi-cant difference ( P>0.05) , the concentration of Ca in serum was decreased with DCAB value increase, while the concentration of Cl had a upward trend. The concentrations of K, Ca, Na, and Mg in urine were not sig-nificantly affected by DCAB value (P>0.05), compared with the control group, the concentration of Cl in groups Ⅰ andⅡ was significantly increased by 33.826% and 35.598% ( P<0.05) , and that in groupsⅢ andⅣ was significantly increased by 95.421% and 76.957% ( P<0.01) . The pH of urine was increased with the DCAB value increase, and compared with groupsⅢandⅣ, there was a significant increase in groupsⅠ,Ⅱand control ( P < 0. 05 ) . Therefore, adding cation-anion balance salt to adjust DCAB values under 177.77 mEq/kg DM can reduce the respiratory rate and relieve heat stress, and increase Ca level in serum of dairy cows, which would improve the health of dairy cows.
本文从生鲜乳价格、奶产量等方面综述了我国奶业2013年前三季度生产情况.据监测和调研,1~9月份内蒙古、河北等10个主产省(自治区)生鲜乳平均价格持续上涨,9月份达到3.70元,同比上涨12.8%;1~9月份全国玉米、豆粕价格有涨有跌,9月份分别达到2.49元/kg和4.40元/kg,同比分别下降3.1%和2.7%.1~9月份,乳品产量、饲料产量和乳品进口同比均在增长,累计产量分别为1 981.4万t、17 240.7万t和109.77万t,同比分别增长7.7%、9.2%和26.71%.

本文概述了10月份我国奶业运行情况.据监测和调研,1~10月份内蒙古、黑龙江等10个主产省(自治区)生鲜乳平均价格持续上涨,10月份达到3.81元,同比上涨15.1%; 1~10月份全国玉米、豆粕价格涨跌互现,10月份分别达到2.46元/kg和4.53元/kg,玉米价格同比下降2.0%,豆粕价格同比上涨3.2%.1~10月份,乳品产量、饲料产量和乳品进口同比均在增长,累计产量分别为2206.5万t、19405.6万t和122.92万t,同比分别增长6.8%、8.8%和30.84%.

本文对今年1~3月份国际奶业市场进行了概述。从新西兰恒天然环球乳制品交易(gDT)指数、全球原奶价格情况、新西兰乳制品出口情况、美国乳制品出口情况等几个方面对近期国际奶业形势进行了分析,以供国内外奶业同仁参考。作为全球乳制品交易价格的风向标,在2011年4月5日第41次交易中,gDT拍卖价格继上次大幅回调后再次下挫,贸易加权指数下降2.4%,这与中国进入产奶高峰期以及乳制品企业生产许可重新审核都有一定的关系。近期全球原料奶价格普遍上涨,涨幅最大的是美国,我国2011年2月份公布的生乳价格为3.19元/kg,在未进行标准乳校正的前提下,已属于全球高奶价国家。2月份新西兰出口创新高,出口乳制品贡献了39%的增长,奶粉、黄油和奶酪是其出口创新高的主要因素,在其所有乳制品出口中,63%出口到了中国。即使在我国海关历年实施特保措施的情况下,中国自新西兰进口奶粉数量仍然大幅增长,使得今年奶粉类乳制品的特保措施实施日期较上年提前了近一个月。1月份美国乳制品出口总趋势无大变化,近3个月向中国出口的乳制品金额呈快速上涨趋势。
Global warming has become the focal topic nowadays,greenhouse gases(GHG) emissions caused by animal husbandry takes 18% of the wlobal's total emission,which has become the main cause of global warming.Therefore,the study of GHG emissions mechanism from various livestock and find out the influencing factors which impact on GHG emission are of great significance on reducing GHG emission.Reviewed the mechanism of greenhouse gas emissions though livestock and put forward the measures on reducing greenhouse gas emissions,provided reference for exploring energy saving,low greenhouse gas emissions of environmental breeding.
本文对今年6~9月份国际奶业市场进行了概述。从新西兰恒天然环球乳制品交易(gDT)指数,近期新西兰、澳大利亚、美国和欧盟,以及南美洲的巴西、阿根廷的奶业情况,美国2号黄玉米及DDGS出口至中国的价格情况等几个方面对近期国际奶业形势进行了分析。在9月份的两次交易中,环球乳制品交易指数连续下跌,专家称有进一步下跌的可能。中国7月份进口的奶粉数量环比再次大幅下降。由于良好的气候和恒天然新产奶年度预期原料奶收购价格高企的刺激,新西兰2011/2012产奶年度首月牛奶产量12.7万吨,同比大幅增长33%,由于在新西兰产奶年度中6月份处于低谷,因此虽然增长幅度很大,但还不能说明新西兰整个产奶年度的增长情况。新西兰6月份牛奶农场收购价格环比出现了一定程度的下滑,折合人民币2.84元/kg,但同比仍上涨12.7%。澳大利亚2011/2012产奶年度第一个月——7月份的产奶量为65.8万吨,同比略有下跌。美国最近几个月的月度牛奶产量全面高于去年同期,8月份的产量达到745.4万吨,同比增长2.10%。虽然国际乳制品价格有下滑的趋势,但总体上依然处于较高水平,预计美国下半年仍将保持1%~2%的增长势头。南美国家中,阿根廷在最近几个月的价格不断走低,已经显示了其强大的国际竞争力。
In order to find out dairy cows raising status perfectly and analyse the bottle neck of increasing the milk quality and benefit of dairy cows raising in Hunan Province,College of Animai Science and Technology of Hunan Agricultural University have investigated the dairy cows raising status of Hunan Province associated with dairy cows professor teams of China Agricultual Ministry who extending agricultural Sci-Tech into households.Through interviewing dairy farms(community and farmers),milk processing enterprise and raw milk collection stations and determing the samples of dairy cows diets,the problems on dairy cows raising of Hunan Province are exposed and the suggestion how to increasing the milk quality and benefit are brought out.
本文对今年7~10月份国际奶业市场进行了概述。从新西兰恒天然环球乳制品交易(gDT)指数,FAO食品价格指数和乳制品价格指数,近期新西兰、澳大利亚、美国和欧盟,以及南美洲的巴西、阿根廷的奶业情况,美国2号黄玉米及DDGS出口至中国的价格情况等几个方面对近期国际奶业形势进行了分析。在10月份的两次交易中,环球乳制品交易指数一跌一涨,由于国际供应增加而需求相对不足,国际市场的乳制品价格很可能会继续走低。粮农组织乳制品价格指数10月份平均为204点,比9月份下降5%,保持在与2010年10月大致相同的水平上。新西兰7月份的牛奶产量达到16.2万t,同比大幅增长8.7%。农场收购价格走势比较平稳,折合人民币2.89元/kg。9月份乳制品的出口额达9.66亿新西兰元,继续稳居各类商品出口的首位。澳大利亚9月份共生产牛奶95.5万t,同比大幅度上涨6.4%,累积产量达到238.3万t,增长了2.2%,产量有加速增长的趋势。美国今年的月度牛奶产量全面高于去年同期,9B份的产量达到716.8万t,同比增长1.69%。估计美国全年的产量增长将在1%~2%之间。10月份牛奶价格为2.80元/kg,在经济前景不稳和国际供给相对过剩的情况下,价格有进一步下滑的可能。6~8月份,美国干乳制品出口399332t,同比大幅增长5%。8月份的出口保持增长势头,出口价值达427百万美元,创下历史新高,同比增长26%。8月份欧盟的产奶量为1151.0万t,同比增长1.09%,前4个月累计牛奶产量6035.2万t,累计同比增长1.82%。由于今年配额的增长仅为1%,因此产量增速很可能会降下来。欧盟9月份的平均原料奶收购价格是36.16欧元/100kg,环比增长0.8%,总体平稳。而前8个月欧盟的乳制品出口继续增长。南美国家中,巴西的原料奶价格自7B份以来连续下降,10月份为3.13元/kg,已经低于中国10月份3.22元/kg的水平;而阿根廷9月份的原料奶收购价格为2.22元/kg,大幅度低于中国。
本文对今年5~7月份国际奶业市场进行了概述。从5月份全球原料奶价格情况,FAO食品价格指数和乳制品价格指数情况,新西兰恒天然环球乳制品交易(gDT)指数,新西兰、澳大利亚和美国乳制品出口情况,美国2号黄玉米及DDGS出口至中国的价格情况,近期澳大利亚、阿根廷、巴西的奶业生产情况几个方面对近期国际奶业形势进行了分析,以供国内外奶业同仁参考。5月份大部分主要奶业国家原料奶价格上涨,其中荷兰的菲仕兰坎皮纳公司原料奶收购价格上涨幅度最大(6.19%),奶价下跌的国家数不多,下跌幅度也较小。我国5月份公布的生乳价格为3.19元/kg,在未进行标准乳校正的前提下,中国已属于全球高奶价国家。6月份FAO食品价格指数为234点,较上月略涨1%,乳制品价格指数为232点,与上月持平,其原因可能是各品类乳制品价格相背运动。6月初gDT拍卖价格上涨,但下跌趋势未改。对华贸易的主要品种——全脂奶粉价格也以下跌为主,在最近一次交易(7月5日)中大幅下跌6.8%,平均价格回落到3638美元/t,其主要原因可能是中国国内原料奶供应的增加以及中国各大乳企在中新自贸协定下关税较低时突击进口,目前储备已经基本完成。5月份新西兰乳制品出口额继续稳居新西兰出口商品首位,其中出口到中国的奶粉占其全部奶粉出口的23.4%。6月29日中国海关总署发布公告对原产于新西兰的乳酪进口实施关税特殊保障措施,按最惠国税率征收进口关税。4月份美国乳制品出口金额394百万美元,同比上升35%,乳清出口数量有所下降,乳糖出口数量上升已接近历史最高水平。阿根廷近期牛奶产量一直在增加,而且该国奶农计划继续增加牛场产量,但其奶粉加工厂产能已接近极限,以后增加的牛奶产量只能用于制作奶酪。巴西牛奶产量由于寒冷干旱的气候造成的饲草减产以及高企的谷物价格而在第二季度继续减产,牛奶价格的上涨并不能抵消成本的上升,产量的下降和消费的增长将带动当地乳制品价格上涨。6月30日,芝加哥期货交易所(CBOT)玉米期货合约全线跌停,美国DDGS价格受到很大冲击,但随后出口市场明显活跃,询盘量有所上升,但销售量依然低迷。中国的需求浮出水面,目前买卖双方都在等待中国商务部宣布DDGS反倾销调查的最终裁决结果。
